I was looking for a new Santoku to replace my cheap $15 14 year old Santoku. There is a lot of buzz going on with Cangshan right now and this knife is part of a larger set they sell as several different retail stores. I thought it looked beautiful and was priced right, so I bought it. Unfortunately, while it is beautiful and was price right, it had very poor performance.The main issue is that it is extremely unbalanced which leads to difficulty in its use. It is very, very back/handle heavy for anyone using a pinch grip to hold this santoku. The balance point is about 1 inch past the bolster into the handle. So if you pick this up in a pinch grip, the blade portion of the knife automatically flips up and the handle portion drops down. And because it is so handle heavy, it makes the blade portion very light in weight when you try and use it to cut food products. It also makes maneuverability of the knife difficultSo while the knife is beautiful, appears to be made of good steel, has a sharp blade, and is ground nicely, the lack of good balance makes this knife a no go in my book. I ended up returning it and am looking at other santokus.

If you are more used to lighter weight knives, these are heavier than you would expect. I have average sized hands for a man, and the handle is long when you grip the knife like a professional. The handle might be too long and heavy for people with small hands. It's freakishly sharp from the factory, holds an edge well, looks beautiful, and is comfortable once you adjust to the weight/balance. A few reviews said the handle can be slippery when wet, but it's not any more slip prone then any other knife. Like any quality kitchen implement, never put these knives into a dishwasher. Don't let acidic food (citrus, tomatoes) sit on your knife. Wash, dry, and store after use. Before you buy the whole set, buy one knife as a test... you will probably fall in love with them too!

I never thought I could love a knife so much. This knife is well balanced, the center of mass is actually where the blade meets the handle so it's easy to hold. It's very sharp and a pleasure to use.

Love the design and the weight. Bought several different sizes - Nice balance - holds a sharp edge, dishwasher safe. Some of our Shuns have nicks and we need to send them back. Bought these to fill in the gap.

The knife is beautiful to look at and very sharp when I tried cutting vegetables. It is heavier than I expected and show great quality. However the hollowed handle design is very uncomfortable to hold. The hollow presses on my palm and the edge around the hollow is sharp against my hand. Returned it for a Global santoku knife instead. Love the Global knife in its handle design and lightness.

I bought this knife on sale in a whim. I was drawn to the unique handle, and the German steel (which is actually a very good quality steel).When it arrived, I was not disappointed at all. The pictures don't do this knife justice. The all metallic design makes the knife look like a work of art. I wasn't sure if I should cut with it or put it on display.The blade was razor sharp on arrival, and cut effortlessly through stationary paper. I was able to cut a tomato and orange into paper thin slices. Mincing garlic and dicing onions was a breeze. This being my first knife purchase in a n decade, it blew my current knives out of the water.I've had it for a few months now and so far it's working great. It's still sharp, but probably needs to be honed. I would recommend it for fruits and vegetables. By design, santokus not the best knife for slicing meats (chef knives or gyutos are better suited).I'm impressed by the quality of this knife for the price. I couldn't be happier with this purchase.No one offered me anything for this review. I'm just very happy with the knife and wanted to share.

I cook a lot and have had great knives and not so great knives. For the price, this knife can't be beat. So sharp. I was able to slice tomatoes paper thin. Mincing was a breeze. The best part was the weight and feel in my hand. It's balanced and a pleasure to use. I can't recommend it enough.
