This was purchased as a gift for my grand daughter. I chose this knife because I had been gifted one and I totally love it. It is my 'go to' knife for most everything. My other favorite knife is the same brand but a small paring knife. Both are expensive but worth the money.

So…I bought this for my wife to help round out her knife block. It wasn’t the same as her other knives, the tang was only tall enough for half of height of the handle, vs the full height like her other Wusthofs. That being said, this has become her go-to knife for food prep.

I originally bought this knife some 16 years ago. The handle cracked recently, so I decided to replace it. Why would I replace it with the same knife after the handle cracked you ask? Because 1) I put the knife in the dishwasher all these years which was against the advice of Wustof, and 2) even so, it took 16 YEARS to be a problem. I couldn't be happier with my new knife and I now wash it, lovingly, by hand every time. :)

This is a good knife for the budget contentious. It looks and feels a little cheap, but what can you expect for the price. It stays sharper and cuts better than my set of mercer knives. If your hands are slippery (say you have garlic or oil on them) the handle is impossible to hold on to. My santoku has been dropped several times and the blade didn't chip, unlike my mercer chef knife. All in all this blade is a good value, but the handle is hard to grip, and sometimes just uncomfortable.

I purchased this Santoku knife to complete the block set from this product line. I use this knife more than any other in the block set. It serves many cutting purposes from cutting vegatables, proteins and meats, anything. It feels good in my hand and it cuts very well. I have been using it for several months and I have not had to sharpen it yet. It still cuts smoothly through a tomato without effort. If you are looking for a knife to complete your set or just looking for a good all around/all purpose knife I would recommend the Wusthof Gourmet Santoku knife.

Cheap, cheap, cheap. The quality of this knife is the worst I've ever seen. Poor quality steel, poor balance, but they made the knife look good so people would buy it. Terrible! I would never buy another Wusthof knife again. I'm sure they have some good quality knives, but their reputation is spoiled by the quality in this knife as far as I'm concerned.

Gekauft um mein Küchenmesserset zu komplettieren, etwas zum choppen mit der "richtigen" Santoku Form mußte her. Die seitlichen Kuhlen waren ein weiteres Kaufargument.Die Verarbeitung ist nicht so satt, nicht so massiv wie ich es bisher von meinen Kochmessern gewohnt bin, da hätte ich mit meinen 10.5er Händen gerne ein wenig mehr Gewicht in der Hand. Im Verhältnis zu meinem Kochmesser 20cm ist der Stahl im Rücken fast nur halb so dünn, das Messer hat meinem Gefühl nach dadurch eine etwas zu geringe Verwindungssteifigkeit. Es fühlt sich dadurch für mich ein wenig zu leicht an. Auf der anderen Seite kann man mit einem schmaleren, leichten Messer besser choppen, keine Frage, und dafür ist es da.Der Schnitt ist zumindest beim neuen Messer mehr als einwandfrei. Gut, die Frage ist wie lange. Die Schärfe per Stahl erhalten zu können ist ein wichtiger Punkt, den ich naturgemäß erst bei Bedarf kommentieren kann. Zumindest aber im Moment ist der Schnitt eine reine Freude, die Schärfe verdient eine kleine Warnung...Update 25. Mai 2012: 5 Sterne, ich choppe gefühlt wie ein Profi. Nach einem halben Jahr mußte ich angefangen es mit einem Stahl abzuziehen.

The Wusthof 4188 Gourmet 7-inch Hollow Cut Santoku Knife is the perfect slicing/dicing/chopping tool. The handle is contoured comfortably, and the blade is capable of slicing sliver-thin to thick, depending on your preference. It's in constant use in my vegetarian household, and has performed beautifully with a variety of fruit and vegetables. The Amazon price is well below retail. I'm delighted with my purchase, and expect it to perform well for many years.

Nach dem mein altes japanisches Messer, nach vielen Jahren treuer Dienste, nicht mehr zu retten war, habe ich mich fuer dieses Messer entschieden und bin begeistert!Der Griff ist leicht und so laesst sich das Messer gut fuehren. Die Laenge des Messers ist optimal.Mein meist benutztes Messer! Nur zu emfpehlen!

I am a bit of a nut for kitchen gadgets, and I have to say that this is one of my two favorite knives (along with a 4" Henckels paring knife). It is both very sturdy and comfortable, but also light and thin, which makes a huge difference when cutting into things like butternut squash or large potatoes or root vegetables. It really is much better than most chef or santoku's, IMHO.As to sharpening, I use an Aladdin Knife sharpener, a wall hanging unit which works very well with this and all my knives. It is not a purist's tool, but it works just right for me. It only needs sharpening about once a month for me, and does very well.
